In the pursuit of the perfect beer, we've brewed A LOT of different styles. On our pilot system in a little back alley warehouse, we brewed over 130 original batches. From that, we narrowed it down to our favorites, which we refer to as our Flagship lineup. We offer these Flagship styles year round, while our Seasonal styles are rotating to compliment the ever changing tastes & sensations of the current season. At the end of this page you'll find our brew graveyard. These are styles we've brewed in the past that we more than likely won't brew again. But, who knows? We may very well resurrect one from the dead!

BATCH 15 (IPA)

This hazy, juicy IPA is hopped heavily with Citra and Simcoe, then paired with choice American wheat and two-row barley. Intentionally unfiltered to spotlight the rawness of organic hops, this IPA is less bitter but more flavorful and balanced than most West Coast versions.

DAWN PATROL (PACIFIC ALE)

This beer is mild yet complex in its delivery. The hop presence is noticed by subtle flavors of pineapples that meld beautifully with the slightly spicy and minty character derived from the use of Rye malt. A somewhat recently pioneered style, this Pacific Ale is delivered unfiltered to accentuate its fresh farm to glass, unprocessed, organic qualities.

GINGER RYE ALE

This beer falls into the “specialty” category, but it’s based off an American Pale Ale and inspired by a delicious cocktail called the “Moscow Moose”. The ginger is present, yet subtle as is the rye. The wild card is the use of limes, which shine through on the finish. This is an adventurous beer and a staple of our brewery.

True Brown Ales are light in body, but not light in flavor. It may sound crazy, but there is no alcohol in this beer. With its genuine beer flavor & mouthfeel, you could be fooled into thinking it did. This is a smooth, medium bodied beer. It is made with American 2 Row Barley, Black, Chocolate, and Crystal 120 malts. Its hop content is low, but perfectly balanced. This is quite possible the only organic non-alcoholic beer that has ever been brewed in our country, making it truly unique. Dedicated to Don Trosset, master carpenter.

A richly flavored, full-bodied Imperial Alt style ale. This delicious seasonal is fermented cold, which allows the deep malt tones to really shine. The balance in this beer comes from a heavy dry hop of Ahtanum and a touch of Mosaic which round out the malt and provide notes of stone fruit and fresh cut flowers.

Rocky Horror Pumpkin Porter

Rocky Horror Pumpkin Porter is a traditional style brown porter, with pumpkin and spices added. This once wildly popular style in the UK is often an afterthought in modern craft brewing. Its deep, roasty, and complexly refined base sets the stage for pumpkin, cinnamon, vanilla beans, and all spice to provide all of the familiar flavors of pumpkin pie.

A fall classic which we brewed to help celebrate the change of seasons. This style has morphed several times over the centuries, once more similar to a Marzen, now brewed more closely to an Export Lager. A pale golden brew with a structured malty-ness that is complimented well by a delicate bitterness and a clean, dry finish.
DISCO LEMONADE (BERLINER WEISSE)

This refreshingly sour wheat beer is brewed to style, which dates back to the Middle Ages and is often referred to as "The People’s Champagne." The tartness of this beer will bring out hints of lemon, while the generous amount of wheat will round out the body lending a remarkable similarity to lemonade. Enjoy as is or add a shot of Raspberry syrup for a twist!

For the third year in a row we bring you Megathrust, an over-the-top IPA, named for the largest potential earthquake set to hit the Pacific Northwest. This version is decidedly the best rendition to date. Its smooth mouth feel is complemented by eruptions of tropical fruit and well placed bitterness. Made with 100% malt, hopped at 5 lbs/barrel.

A combination of Munich, caramel, and chocolate malts create a malt profile that is rich, nutty, and slightly sweet. Subtle chocolate and roasted notes make for a sessionable winter beer.

Chai Milk Stout

This traditional Milk Stout brewed with lactose sugar, the unfermentable sugar in milk, has a pleasant and well-rounded sweetness. That sweetness is balanced with dark, roasted malts and a traditional Masala chai spice blend. The subtle notes of chai, coffee, and chocolate give this beer a comforting and robust finish that is perfect for these gloomy winter months.

Brewed in the Sticke (shtick-uh) Alt style, this is a stronger, bigger-bodied variation of the traditional Altbier from the Westfalia region of Germany. A combination of caramel and Munich malts contribute a nutty sweetness with notes of toffee. Fermentation at a cool temperature creates a clean, refreshing character to balance the complex malt profile. This malt-forward beer is punctuated with hops that are floral and slightly-spicy.

This IPA is a big citrus bomb of white grapefruit with hints of Meyer lemon zest. The bitterness lasts, but at a pleasant, well-balanced level.

Frances Farmer (Saison)

Made in the Dupont style, this classic representation of a farmhouse ale is light in color, with a soft mouthfeel that is complemented with lots of carbonation. Faint notes of bubblegum are washed away with hints of naval oranges, making this beer quite refreshing.

This is your classic, easy drinking light lager beer — light in flavor, alcohol, and calories. While it may be an American macro brewery standard, it’s better when brewed in small batches without corn and rice. Pours a pale straw color with a rocky white head. This dual release was once, and still fundamentally is, the same beer. A Belgian Strong Dark, fermented in stainless, then split into rye whiskey and Cab Sauv barrels. Each version was elegantly altered by the wood in which it slumbered for 10 months. The rye whiskey version, strong handed and American, aged on top of Aji Limo peppers, accentuates the whiskey burn. The Cab Sauv version, delicate and complex, continued its fermentation with a culture of Brettanomyces, has deep layers of dried fruit and earth.

Big, fruity and funky - that’s what unicorn picnics and this beer have in common. To re-create the epicness of a gathering of unicorns having a picnic we took our Dawn Patrol and fermented it entirely with Brettanomyces Lambicus in red wine barrels for several months. What came out was a beer like no other. It’s full of tropical fruit notes, has all that wonderful brett-funk on the nose, and leaves behind a light tartness. So raise a glass to all the unicorns in the world and join the picnic!

When we got our hands on four freshly emptied rye whiskey barrels from Heaven Hills Distillery we knew exactly what to do with them; fill them with our Ginger Rye Pale Ale and create a Whiskey Ginger! All of the flavors of the Ginger Rye are still there, yet the oak has rounded out and softened its edges. While the barrels sheen, its char has lent the distinct warming sensation of whiskey to create a truly unique beer.

Fermented in stainless steel with a Belgian Saison yeast then aged in red wine barrels from Mt. Baker Vineyards with Brettanomyces for 7 months. The Brettanomyces lambicus accentuates a complex layering of stone fruit esters with a mild tartness softened by the Hungarian Oak from the barrel.

This is a blended beer consisting of 75% light American Lager and 25% Red Saison. Both experienced a primary fermentation in stainless steel. Blending took place in a White American Oak barrel with brettanomyces and then allowed to mature for 9 months. The Pilsner malt from the American Lager really shines and compliments the fruity esters of the saison and brettanomyces, yielding flavors reminiscent of bread pudding with fresh apricots complimented by a lightly acidic finish.

Our latest brettanomyces project release explores the realm of the Light American Lager. We took our first batch of Aslan Lite, which was brewed with American Lager yeast, and filled a couple red wine barrels with it. One American white oak, one Hungarian oak. Then let the house blend of brettanomyces do its work over the course of 10 months. What you get is a Pilsner with brett. The horesey nose leads to a slightly fruity entry on the palate that finishes quite dry. It’s not an overly complex beer, but a fun and unique take on barrel aging with brettanomyces.

This brew shines a light on a new approach to an old style.

Named for the lovable extraterrestrial tree giant, Groot, this unhopped herbed ale contains lemon peel, pink peppercorn, and rosemary paired with a blend of pilsner and wheat malt. Gruit is the mixture of herbs, spices, and roots used to flavor wort in the early years of brewing before hops were popularized. The ingredients augment the fruity fermentation profile, present a clean, dry, bready character, and emulate the spicy hop profile that may be often be found in a classic saison — though this brew is far from traditional.

A special beer made in collaboration with Itek Energy and Western Solar to help raise funds for a solar panel system for Lydia Place. Its dry yet juicy body is complemented well by a complex, spicy finish.

For this year's Washington Beer Collaboration Festival, we teamed up with North Fork Brewery head brewer, Eric Jorgensen. This deep red, moderately tart beer exudes flavors of dark chocolate and pie cherries. In the spirit of creative collaboration, we went a step further and dry hopped it with Nelson Sauvin to create a truly unique beer that exemplifies the strengths of both North Fork and Aslan brew.

A special style of IPA brewed to help raise awareness for our friends at the Northwest Avalanche Center (NWAC). Midnight Couloir is a very dark IPA with a robust bitterness and a dry finish. The confluence of rich malt with bitter, piney Northwest hops creates a very complex IPA perfectly paired with the colder months of the year.

This special batch of brew was created in collaboration with RE Sources for Sustainable Communities as a tribute to clean and sustainable energy. $1 per pint is being donated towards developing clean energy solutions and protecting our communities from unsafe fuel transport. This medium bodied, full flavored beer pours silky mahogany with a tan head. The nose is roasted coffee with dark chocolate. A presence of Cascade hops gives this robust porter the full flavor and balance you expect.

Night Riders is a beer brewed in collaboration with our friends at Base Camp Brewing Co. in Portland, OR. Too often breweries will only play around with ales, but one common thread between our breweries is that we like to think outside the box. That is exactly what you get with this big fruity lager. Its nose is estery like an ale, but cleaner and less muddled as you would expect from a lager. It tastes of tangerine and pineapple in a present yet subtle way that washes across your pallet effortlessly as it leaves you with a clean neutral finish.
FIFA (FRENCH INDIA FARMHOUSE ALE)

FIFA, aka French India Farmhouse Ale, is a Farmhouse style IPA brewed specifically for our hometown football club, Bellingham United. This juicy beer initially greets your nose with a spicy array that is blended nicely with pine needles and citrus peels. The palate consists of a heavy dose of white grapefruit, lending a very fun and approachable bitterness. As it washes down, you are left with a nice clean/dry finish that is soft and mellow. This year we have added a brand new hop, Jarrylo, to the mix.

This big IPA comes out swinging with a bold hop hammer ready to take on your taste buds. This heavy hitting beer is big on tropical melon and tangy citrus that is smooth and maybe too easy to drink. What you wont find here is the typical super malty, sticky, crazy bitter IPA. Its all about big hop flavor that keeps you wanting more.

Smooth, clean, and rather rich, with a depth of malt character. This is one of the classic malty styles, with a maltiness that is often described as soft, complex, and elegant but never cloying. Mouthfeel is medium with a creaminess that accentuates the rich malt character.

Brewed specifically for Bellingham Beer Week 2016, this Kolsch style ale was conditioned on 200lbs of fresh organic blackberries. The fruit turned this once straw colored beer pink, and gave it a subtle, yet defined fruit note. A mild acidity gives way to a beautifully balanced sweetness that perfectly defines this brew.

ANNIVERSARY XIPA

This special Extra IPA was brewed to celebrate our second birthday! It comes across very smooth and juicy, reminiscent of fresh squeezed orange juice. Its big body is made of floor malted Maris Otter malt, which really takes center stage. In terms of the ingredients used in this beer, it's odd considering hops are what tend to make or break IPA's. In this case the beautiful, traditional style of malting once widely used, but now difficult to find, is what supports all the juicy hop flavors in this beer. Floor malting is said to lend a unique "earthy" tone to the beer it is used in - see if you can pick it out!

Nectarine Farmer (Saison With Nectarines)

We infused our Frances Farmer! Made in the Dupont style, this classic representation of a farmhouse ale is light in color with a soft mouthfeel complemented with lots of carbonation. It was fermented and conditioned with 50 lbs of organic white nectarines which add a subtle, yet complex fruit note to this refreshing brew.

Centennial Fresh Hop

Our first fresh hop beer of 2016 was brewed with 50 lbs of Centennial hops grown in a unique coastal micro-climate in Northern California. These Centennials provide intense aromas and flavors of pine which dominate in the beer. Calculated at an astounding 181 IBUs (although we highly doubt its actually that bitter), this beer is an example of what woodsy, piney and dank hops have to offer when used fresh and in the right proportions.

Azacca Fresh Hop IPA

This single malted IPA is hopped with fresh Azacca hops from Roy Farms in Yakima Valley, delivered from the source to the boil kettle the very same day. Notes of huckleberry, and mint accentuate the pungency of the beer. While not a display of overusing fresh hops, this IPA showcases an appropriate usage to create an intense flavor/aroma experience.

Floor Malted Maris Otter
Throwback Pale Ale

This Pale Ale is hopped exclusively and heavily with Yakima Cascades and Idaho-grown Chinooks, two of the original experimental hops in craft brewing. The use of rye in the mash adds intrigue to the malt bill while staying true to the clean and balanced nature of this style. The beer is highly filtered to pay our respects to the original hoppy Pale Ales that made the style popular.

A Dortmunder Export style lager can be thought of as a cross between a German Pilsner and a Helles. It is brewed to a higher starting gravity than other light lagers, making it a perfect winter beer. The unconventional use of Maris Otter malt works perfectly with this style, giving the firm malty body depth with a nuance of lightly toasted crackers.

NELSON SAUVIN BELGIAN BLOND

A more recent Belgian style that is light gold or straw-like in appearance with subtle Belgian complexity. We amped the style up by using fresh Nelson Sauvin hops grown in New Zealand. These fine hops lend a nice layer of complexity to the beer that comes across as that of a white grape must. The semisweet body created by the use of Contential Pilsner malt completes the sensory brush stroke with a soft finish.

AZACCA EXTRA PALE ALE

This special release was brewed to show off a brand new hop variety, Azacca; named after the Haitian God of Agriculture and grown organically in Yakima Valley. It is advertised as a hop big in citrus and tropical fruit notes. The pairing of it with the biscuity type malts used in the mash make for a flavor reminiscent of sunbrewed strawberry and peach tea with a finish so clean and ballanced you might think its a lager.

A refreshingly juicy Belgian Pale Ale brewed with Czech Saaz hops, a brand new hop from Yakima Valley called Jarrylo, and 50 lbs of fresh blood oranges. The sweet, slightly tart blood oranges dominate the pallet, while subtle undertones of spice are carried through from the Saaz hops and Belgian yeast.

ROCKY HORROR PUMPKIN ALE

The goal with this beer is to deliver the experience of pumpkin pie in a glass – smooth, rich, semi sweet and appropriately spiced. That means real organic pumpkin, fresh ginger, nutmeg, cinnamon, and vanilla beans all working in unison with the usual suspects that make beer. None of the flavors dominate the palate, creating a beautifully balanced fall classic.

FRESH OUTTA HOP'TON IPA

Medium body + tangerine and orange peels + juicy
This year’s fresh hop offering is brewed with Simcoe for bittering and dry additions and hop bursted with 50 lbs of fresh, wet Chinook hops. Picked from our specialty boutique hop farmer in Northern California and used 24 hours later. A flavor reminiscent of fresh squeezed orange juice dominates the palate, but is supported nicely with a robust British pale malt for a sweeter, softer finish. To say that this beer is saturated with hops would be an understatement!
CUCUMBER LAGER

An Vienna style lager fermented with 30 lbs of fresh, locally grown, organic cucumbers. This experimental lager will blow your taste buds away with its subtle, yet obvious cucumber flavor. Nicely balanced with a rich malt profile that evokes flavors of honey and toasted bread. While rich in malt this beer has an elegant cucumber touch on the finish.
SAISON DE VÉLO

Saison de Vélo is a Farmhouse Ale with a deep amber hue. This unconventional take on a Saison is darker than most, but remains peppery on the nose. It’s a dynamic beer exploding with tart cherries that round out nicely with notes of wild strawberries and finishes with a splash of pink peppercorn. It is not meant to be your typical Saison, but rather an interpretation of the changing season that we know as Spring.

This deliciously dark brew is a sour American Brown Ale fermented with two separate strains of Saccharomyces-Cerevisiae (ale yeast) and Lactobacillis-brevis to create a distinctively tart yet multidimensional flavor experience. Prepare your palate for a lactic sour cherry bomb that carries nicely across the tongue, setting off tiny fireworks of acidity, each punctuated with a different flavor from the complex malt bill.

A unique twist on a northwest classic, our version uses our house lager yeast instead of a typical ale strain found in CDA’s. We combine Chocolate malts with roasted barley and add generous portions of Simcoe, Centennial, and Cascade hops for a dark lager experience that’s very smooth and not overly hoppy.

GARGOYLE FRESH HOP

For 2014's hop harvest we brewed this single, fresh hop ale. Using whole cone, fresh organic Gargoyle hops, this beer is mild yet complex in its delivery. The hop presence is noticed by subtle flavors of pineapples that meld beautifully with the slightly spicy and minty character derived from the use of Rye malt. A first for us, this beer is delivered unfiltered to accentuate its fresh farm to glass, non-processed, organic qualities.

A twist on the classic American Pale Ale. We start by adding 100 pounds of oats to the mash to create a smooth, almost creamy body. Then we add Chinook hops for bitterness, Cascade for roundness and finished with Sterling and Centennial for a nice well-balanced hop profile.

Helles style lagers are Bavaria’s response to the popular Bohemian Pilsner. We are humbled to offer our version of this ancient masterpiece by “spicing” it up with a heavy dose of Rye malt (33% of the malt bill) and finishing it with our crown jewel hop, Gargoyle (you'll also find Chinook, Sterling, and Hallertau on the hop bill). Enjoy the subtle flavors of the rye as they mix perfectly with the peach/pear flavors present from the Gargoyle hops.

LE TIGRE INDIA PALE LAGER

IPL’s, as they have come to be known, are a twist on the craft classic, IPA. The main difference being that Lager yeast is used as opposed to Ale yeast. Ours is sweet from the use of Munich and C-120 malt and fruity with a clean finish, the calling card of the lager yeast. It's a deep orange hue with a very apparent floral bouquet from the Summit, Simcoe, and Citra hops.

Oktoberfestbier, also referred to as Märzen, is a traditional German Lager that is brewed in March, then enjoyed in the fall season for the Oktoberfest celebration. This style is smooth, clean and malt forward. We make it strictly with Vienna & Munich malts to accentuate its smooth malt character and beautiful orange hue.
